Bucatini Carbonara with Pea Shoots

Fall is starting to settle in – colder temperatures, crisper air, and the last good push of summer vegetables.  So, it seemed perfectly appropriate to pull out the smoky bacon from the crew at Salumeria Biellese and make up a quick, true,  Carbonara – Bacon, Egg, Pasta, Parm, and Pepper.  However, I wanted to add a bit of color and greens to it so instead of the standard peas, I decided on pea shoots.  They twirl with the pasta, still have that bit of sweetness, but also have a hint of earthiness to balance the smoke.  All in all, this dish was fantastic.
